"Lowcountry" refers to a region in coastal South Carolina, beginning at Pawley's Island and stretching southward through the Georgia state line. Often compared to Cajun and Creole cuisine, lowcountry cuisine relies heavily on the abundance of seafood available along the coast, the fresh produce grown in the Southern states, and, perhaps most importantly, the rice that has been cultivated on the coastal plains since the 18th century.
