Cayenne Pepper is a member of the Capsicum annuum family. Like all chile peppers, it has origins in South and Central America. It is moderately hot, with a Scoville rating of 30,000 to 50,000 units. Chile peppers have been used as a flavoring agent for thousands of years in South America, making their way to Europe in the 15th century. Today they are popularly used in cuisines around the world.
Cayenne peppers are typically 10 to 25 centimeters long, with a curved tip and bright red, rippled skin. They are usually dried and ground to make Ground Cayenne Pepper, used to add heat and bright red-orange color to dishes without adding texture. It can be easily incorporated into sauces and liquids, and provides a sweet and sour flavor with dusty overtones. Ground Cayenne is a primary ingredient in many hot sauces, and is also used to flavor sausages. It is an important element in the flavoring of Louisiana gumbo.
