Pure maple syrup
Maple Sugar is the crystalized remains of maple syrup that is boiled until all of its water is driven off. This produces a shelf-stable, dry form of maple syrup more easily transported, stored and used in recipes in which extraneous liquid is not desired.
The extraction of sap from the maple tree is an age-old process, consisting of piercing the tree to allow the clear sap to run out freely. It is then boiled to remove the water and harvested at different consistencies for various forms of the sweet syrup.
The native people of North America were the first to discover the quick-energy and nutrient-dense source of food. Once Europeans found their way to this new land, they learned the ways of these native tribes and began using this process to extract and process maple syrup. While the technology has improved, this process is essentially the same today. Maple Syrup and its varieties have persisted through time due to their distinct flavor, natural quality and nutrient density.
Our Maple Sugar Powder is 100% pure maple syrup. It's simply boiled to drive off as much water as possible without burning. Once cool the only other process it undergoes is grinding and sieving to create this consistent powder (95% will pass through a US #12 screen).
