King Oyster Mushrooms

King Oyster Mushrooms, also known as “Ivory Portabella Mushrooms,” are meaty and mild, adapting well to numerous cooking techniques but especially grilling, roasting or broiling. Our King Oyster Mushrooms are cultivated and harvested, sliced and dried without the addition of any preservatives.

    Suggested uses

  • Marinate simply in garlic, olive oil, salt and pepper, and roast in the oven for a delicious pizza topping

  • Pickle mushroom pieces in vinegar, sugar and salt for a unique flavor profile to serve alongside fatty meats and pates

  • Rub with assertive spices such as smoked paprika, coriander and cumin, and roast

  • Add to rice pilaf or rice casseroles

  • Basic prep

    Rinse mushrooms thoroughly under cold running water to remove any possible debris. Place desired amount into a bowl and cover with boiling water. Let soak 15 to 20 minutes, then remove from water. Or, rinse and add directly to any recipe that will cook at least 25 minutes.

    Ivory Portabella Mushrooms.

    King Oyster mushrooms (Pleurotus eryngii), also known as “Ivory Portabella Mushrooms,” are a white to light tan, trumpet-shaped wild mushroom native to Mediterranean regions of Europe, the Middle East and North Africa, but also grown in many parts of Asia and cultivated widely.

    This variety of mushroom, the largest species in the oyster mushroom family, has a thick, white stem and a small, concave tan cap, with very tight gills on the underside that continue down the length of the stem. It grows in clusters near the roots of the field eryngo plant, a thorny perennial plant often found in seaside regions. King Oyster mushrooms are usually harvested when they reach a few inches in length, but they can reach 6 to 8 inches if left undisturbed.

    Beneath its blunt cap, the thick, white flesh is firm textured and meaty. Its flavor is mild, similar to standard oyster mushrooms, and easily takes on the flavors of other ingredients in a dish. As a result, it is a popular mushroom for marinating or rubbing with assertive flavors and roasting, broiling or grilling. Our King Oyster Mushrooms are excellent for use in any dish which requires a mild, meaty mushroom, but does not require full slices.
