    What we refer to as ‘Parmesan’ cheese in the United States is a cheese that’s inspired by the hard, dry Italian cheese, Parmigiano-Reggiano. Like French wines, Parmigiano-Reggiano is a highly regulated cheese that must meet specific criteria and must be produced in the regions of Bologna, Mantua, Modena, or Parma, Italy. The goal of these regulations is to preserve the integrity of traditional Italian foods and the artisans that produce them. Though Parmesan cheese doesn’t always fit the strict Parmigiano-Reggiano criteria, it has many of the same characteristics: it’s made from skimmed or partially skimmed cow’s milk and aged before use.
