Herbes de Provence is a mixture of summer herbs that are common in the region of Provence, France. Provence is in the southeast tip of France, bordering on Italy and encompassing the French Riviera. These traditional herbs are mostly popular for grilled foods, but can also be used for roasting or in soups, gravies or stews. It is rarely used as a seasoning after cooking, like salt or pepper, as the cooking process is what truly brings out the different flavors.
