    Ingredients

    Dried Habanero Chiles.

Loosely translated from Spanish, habanero means "from Havana.” Originally from the Amazon region of South America, this pepper migrated to Cuba and is now grown in Mexico, Belize, Costa Rica, Texas, and California. Habaneros are compact and squat, with a color which ranges from pale yellow to bright orange and deep red. Fresh peppers are anywhere from 1/2 inch to 2 inches long, and 1/2 to 1 inch wide with a bumpy, waxy skin. Habanero peppers boast an intense heat, registering between 100,000 and 300,000 Scoville heat units on the Scoville Scale. By comparison, jalapeño peppers range between 2,500 and 8,000 heat units. Habaneros boast an underlying fruity flavor that mixes well with tropical fruits and tomatoes. In the year 2000, the habanero was inducted into the Guinness Book of World Records as the hottest chile but has since been surpassed by numerous other varieties. The habanero chile (Capsicum chinense) is in the same family as the scotch bonnet, wiri wiri and scorpion chiles which are the hottest in the world.
