    Amaranth has long been cultivated in Mexico and is considered a native crop in Peru. It was a major food crop of the Aztecs, and some have estimated that amaranth was domesticated between 6,000 and 8,000 years ago. Seeds from the amaranth plant spread around the world and became an important food source in areas of Africa, India, China, and Nepal. Amaranth can thrive in low-water conditions, making it especially valuable in sub-Sahara Africa and other low-water areas.

    Amaranth is grown for its starchy seeds and is not from the same family as cereals such as wheat and rice. For this reason, it is often referred to as a pseudo-cereal, meaning that its overall nutrient profile is similar to that of true cereals.

    Amaranth boasts an impressive nutritional profile as it contains calcium, iron, magnesium, phosphorus and potassium and protein. It is especially high in the amino acid lysine, and is uniquely suitable for those following vegan and vegetarian diets. Amaranth is also naturally gluten-free, making it a safe choice for those with gluten allergies or intolerances.

    Ground amaranth can replace 25%-50% of regular flour in recipes for added nutrition and a light, peppery flavor. It can also be used in tandem with other gluten-free flours and starches for gluten-free recipes.
