The ghost chile pepper, also known as bhut jolokia,U-morok, red naga, naga jolokia, and ghost jolokia, is an hybrid of Capsicum chinense and Capsicum frutescens. Specifically bred to produce an extremely hot pepper, the ghost chili is rated at more than 1 million Scoville heat units, making it one of the hottest in the world. The ghost chili pepper is so hot that it has been used as an elephant repellent in northeastern India. Interestingly, climate has a considerable effect on the heat of ghost chili peppers: according to a 2005 study, peppers grown in Tezpur (Assam) are more than twice as hot as those grown in Gwalior's less humid climate.
Fresh Ghost Chiles are generally 2-1/2 to 3-1/2 inches long and about 1 inch wide. They ripen to a range of yellow-orange to bright red colors. Peppers are extremely variable in appearance: some have rough, dented skin while others are smooth. Ghost chile peppers are used as a food and a spice, both fresh and in dried forms. Our ghost chile powder is made from dried, pulverized ghost chile peppers for an easy, shelf-stable way to incorporate extreme heat into foods.

Spicy Shrimp Curry
This blazing hot Indian shrimp curry gets its singeing heat from the “bhut jolokia” or ghost chile, one of the hottest chile peppers in the world. In its powdered form, just 1/2 teaspoon makes a swelteringly hot curry. For a slightly less potent (but still fiery hot) result, scale back the chile powder to 1/4 teaspoon.
