Basic prep
Sort carefully, then rinse thoroughly and soak overnight. Rinse and place in a large pot, covered with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 60 to 90 minutes, until tender. This bean produces foam when boiling, so skim the water regularly.

The French Navy Bean (Phaseolus vulgaris) is also referred to as "white pea bean" or "coco blanc." It is not related to the common navy bean, which was issued as a standard ration by the U.S. Navy during the 19th century. Although they resemble the navy bean, they are smaller and more rounded, and have light celadon green shading along one side.
