Fleur De Sel is the most renowned form of salt in the world, valued for its ability to highlight other flavors without being too salty. A natural source of potassium, calcium, magnesium, copper and zinc, its flavor is made even more impactful by its inherent trace minerals.
Fleur De Sel is harvested in Guérande, Brittany, France, home of the most prized and renowned salterns. Gathered by an artisan paludier (craftsman salt harvester), it is collected by sweeping the top of seawater evaporating in manmade salt ponds with wooden rakes.
Raked from reservoir to reservoir to decant, the salt is finally evaporated with the help of the sun and the wind. Fleur De Sel is the very top layer of salt on the resulting sediment (its name translates from French to "flower of the salt"). Consequently, it has the purest flavor and the brightest white color. Sel Gris is the gray salt found just underneath the Fleur De Sel. For every 80 pounds of Sel Gris harvested, there are three pounds of Fleur De Sel.
Chefs prize its fine texture and use it as a finishing salt. Fine chocolatiers and confectioners use its delicate salty flavor and light, crunchy texture to garnish and balance sweet creations.
