Suggested uses
Basic prep
Rinse mushrooms under cold running water to remove any possible debris. To rehydrate prior to use, place desired amount into a bowl covered with boiling water and let soak 15-20 minutes. Rinse well, or rinse and then add directly to any recipe that will cook at least 25 minutes.
Storage & handling
Store in a dry, cool place.

Wood ear mushrooms (Auricularia auricula-judae), also called tree ear or black fungus, are cultivated all over the world, and are known to grow on both dead and living wood. They are dark brown to black, smooth and shiny, with no gills and a distinctive wavy shape that resembles an ear growing out of a tree, hence the name.
Wood ear mushrooms have been used in folk medicine for ages, and are often thought to promote heart health by positively affecting blood coagulation and decreasing cholesterol levels.
Our First Quality Wood Ear Mushrooms are dark on one side and light on the other. However, the two sides blend to a uniform dark brown to black color when rehydrated, making them a dramatic color addition to stir-fries, soups, sauces and other dishes. They are very mild in flavor, so in most applications they are used for their color and unusually crunchy texture.
