Coarse Cut Fennel is unmistakable for its unique earthy flavor and anise aroma. It is a versatile seasoning used in sweet baked goods like cakes, cookies, and breads, as well as savory dishes like sausages, sauces, and stuffing. Fennel grows wild in Italy and throughout the Mediterranean region, so it is not surprising that the ancient Greeks were well acquainted with fennel. They knew it by the name "marathon," and the name of the plant, in turn, inspired the name of the plain where the Battle of Marathon took place in 490 BCE, as well as the distance-running event that was developed in tribute to the battle. Additionally, in Greek mythology, Prometheus used a stalk from the fennel plant to steal fire from the gods and bring it to humanity, thus enabling civilization to thrive and progress. Later on, during the Middle Ages, fennel was one of several herbs believed to ward off witchcraft. Many hung fennel over the doors of their homes on Midsummer's Eve to keep evil spirits at bay. Fennel seed also has been used in traditional medicinal applications, including relieving digestive problems, such as heartburn, bloating, and gas. It has also been used to treat respiratory infections, coughs, and bronchitis. In many parts of Indian and Pakistan, roasted Fennel Seed is chewed after meals as a digestive aid and to freshen the breath. Coarse cut fennel makes the perfect addition to ground meat, sausages, and stuffing, and it also adds depth to sweetbreads, cookies, and even teas.
