    Cancha Serrana is made by soaking whole corn kernels in water for several days, making them puffy, floury and soft. They are then fried in oil to create a crunchy snack food that is extremely popular in South America, especially Peru, where it is commonly served alongside ceviche.

    Peruvian Ceviche

    Peruvian ceviche is typically marinated in a blend of citrus juice, various aji chiles and red onion. This marinade is so intensely flavored it has a name of its own (leche de tigré, or “tiger’s milk”) and is frequently served as a hangover cure.
