    Bulgogi, which translates to “fire meat,” is a centuries-old Korean tradition – thinly sliced meat, generally beef, is marinated then cooked using traditional grilling techniques. The meat’s complex marinade is a rich combination of ingredients that balances five key flavors: salty, sweet, spicy, sour, and bitter. Primarily, the marinade includes soy sauce, sugar, sesame oil, garlic, pepper, and sometimes other ingredients like ginger, onions, chile flakes, or scallions. Additionally, rice wine or pear purée is often added to help tenderize the meat and add sweetness. Once the meat is seared and caramelized, bulgogi is typically served wrapped in fresh lettuce leaves, along with steamed rice and additional condiments like gochujang. Kalbi, or galbi, is another popular Korean barbecue dish that is prepared in a similar way with a similar marinade, but using short ribs instead of thinly sliced beef.
