Quesabirria con Consommé

Quesabirria con Consommé is a delicious Mexican dish that has gained popularity in recent years. It consists of a flavorful, juicy and tender meat filling wrapped in a tortilla and served with a side of rich, savory consommé.

Basic prep

· 2 lb Stew meat or braising meat of choice

· 4 to 6 tbl (32-42 grams) Birria Seasoning and Sauce Starter

· 1 each 14.5 oz can diced tomato (optional)

Toss stew meat with Birria Seasoning and allow to sit for 30 minutes.

Lightly brown meat in batches being careful not to burn Birria Seasoning (this step is not mandatory but adds to flavor of finished Birria).

Combine seasoned and seared meat in a Dutch oven, with tomatoes (optional) and 3 to4 cups of water. Simmer partially covered for 1 ½ hours or until meat is very tender. Add additional water if necessary.

Ladle into bowls and garnish with cilantro, pickled red onions and avocado. Serve with warm tortillas!

Storage & handling

Store in a dry, cool place.
