Avocado (Persea American) is a widely popular fruit that grows on trees in tropical and Mediterranean climates. Avocado trees are believed to have originated in South-Central Mexico, and evidence of cultivation and consumption of the rich fruits dates back thousands of years.
Today, Avocado’s are consumed worldwide with numerous cultures integrating avocados into their diets and creating unique dishes that feature the fruit. For example, in Nicaragua, Avocados are stuffed with cheese, battered, and baked. In the Philippians, avocados are pureed, mixed with sugar and milk, and served as a dessert drink. French cooks use avocado halves as bowls, filling them with shrimp and dressings to make delicious appetizers. And in Korean, avocados are widely used as a topical for facials and body massages.
One reason Avocados are highly prized is their nutritional value. Avocados have an oil-rich pulp that is high in healthy fats and rich in vitamins and minerals.
Cultivation and transport of avocados are impacted by environmental and timing variations required to ensure optimal ripeness of the fruits when they reach consumers. The fruits begin to ripen and soften immediately after being harvested and require cooling to optimal storage temperatures to delay this ripening. Optimal storage temperatures need to be maintained throughout storage and shipping. Even so, max storage times only allow for 2-6 weeks before the fruits are no longer viable for a retail setting.
